Super Bowl Sunday Gluttony Edition: 3-Way Nachos and Tilapia Tacos with Salsa Verde and a Creamy Chipotle Sauce! I am not a big sports fan. My inability to enjoy sports is most likely related to my inability to play them. I can still "feel" the collective sigh my parent's let out when they realized if I did not play baseball anymore they would not have to endure watching me play attempt to play baseball anymore. It was really best for all of us. My sports career ended at age 13.

Fast forward twenty some years later and not much has changed, except of course my eating habits. I figure the best way to survive any big sports event is by having either food and/or beer in my mouth at all times. The more food and/or beer I have in my mouth, the greater the odds are of not being embarrassed by little sports facts such as not knowing Tiger Woods batting average. I'm kidding of course, it's not that bad...everyone knows he plays basketball, duh.

3-Way Nachos

First off, our 3-Way Nachos were an accident. Mental note: When buying a can of Skyline Chili, buy the can without spaghetti in it. Whoops. As I read the label I kept saying, "they can't be serious!" Who is lazy enough that they can't boil water for spaghetti? Well I was hungry, so on the chili and spaghetti went. Turns out, it was pretty good. I kept thinking of the commercial, "you put your chocolate in my peanut butter"..."no, you put your peanut butter in my chocolate". Just substitute peanut butter for nachos and chocolate for spaghetti. In the end it works. In the future I want to get a grill tray so I can make these outside and not inside, in the oven.

Saturday I bought a couple Tilapia filets not really knowing what I was going to do and at the last minute decided on tacos. These things were great. I think a big part of it was the fact the fish was grilled. There is just something I enjoy about grilled fish. This made me realize I need to do it more often. They were a little overkill with the Salsa Verde and chipotle sauce, but it was so worth it. I am embarrassed to say (well not that embarrassed), I ate two whole filets myself.

Tilapia Tacos with Salsa Verde and a Creamy Chipotle Sauce

4 Tilapia filets

Salt and Pepper

Tortillas or Tacos (you have the power to choose)

Grated Cheese

2 Bell Peppers (any color will do you)

1 Medium Yellow Onion

1 Cup of Mayonnaise

2 Tablespoons Chipotle Puree

1 Lime

The Salsa Verde I have done before, it is found here. For the Creamy Chipotle Sauce, combine the mayonnaise, chipotle puree and the juice of one lime.

I like vegetables with my tacos, so if you do as well, cut up your bell peppers and onion and sauté with olive oil.

Preheat your grill for direct medium (350ish) cooking. Season the Tilapia with salt and pepper. Make sure your grill grates are cleaned thoroughly. Once the grill is preheated, oil your grates (I just take a folded paper towel, dip it in some oil, and then with tongs brush the area I plan on placing my food).

Place the Tilapia on the grill. Grill the first side for approximately 7-8 minutes and then flip. Grill the second side for approximately 3-4 minutes, or until the flesh flakes.

I place my tortillas in aluminum foil and stick them directly on the grill for about twenty seconds. This warms them up nicely.

With everything done, fill yourself a tortilla and enjoy.
