Grilled Olives with Honey Feta Whip
If you love olives, you are going to love them grilled. There is just something magical about these tiny briny orbs when they take on heat. Toss in the whipped feta and honey and you have the making of a perfect appetizer.
Types of Olives
Technically, any type of olive will work. However, I find kalamata and castlevetrano are the most approachable. And I mean approachable as easy to find without going on an olive expedition at a speciality store. Personally, I love rich and meaty kalamatas.
Grill Type
While the recipe calls for using the very awesome top-down infrared broiler on the new Weber Summit Gas Grill, you can just as easy grill these over indirect medium-high heat on any gas or charcoal grill. The IR broiler is too cool not to feature, but it’s also not necessary.
Grilled Olives with Honey Feta Whip

- In a small cast iron skillet, combine the olive mixture.
- Setup a grill for indirect medium-high heat (400º - 450ºF).
- Grill the olives over indirect heat until warm and blistered, about 25 – 30 minutes.
- ALTERNATE: Prepare the top-down infrared broiler on the Weber Summit Gas Grill for low heat. Using the bottom rack position, grill the olives until warm and blistered, shaking every minute, about 4 minutes total.
- Combine the whip ingredients in a food processor or blender. Process until smooth.
- Spread the whip in the bottom of a small serving bowl and top with the olives.
- Serve with crackers or crusty bread.
