In a somewhat traditional Irish way, for a guy that is mostly German with a little bit of Welsh (I think), I decided upon Colcannon with a grilled pork chop covered in a honey balsamic vinaigrette. I love Colcannon, which is a traditional Irish potato dish made with kale or cabbage. Mine, taken from a Williams-Sonoma book, was embellished with leek, shallots, kale and cabbage. I absolutely love it...if you haven't had it before, try it.
