Lamb baby back ribs! This was new to me. I love lamb, but I have never had it preferred this way before. Absolutely delightful!
It was an indirect cook at about 275 for an hour. The ribs came off medium and were prepared over a bed of watercress and then drizzled with a chipotle vinaigrette. Not bad for $5 worth of meat!
